Hot salt frying works much like deep frying but cooks food in heated salt instead of oil. Chefs heat coarse salt until it holds intense, even heat, then use it to fry ingredients quickly without submerging them in fat. Even though the food cooks directly against the salt, the finished dish does not come out tasting especially salty.
