You usually can't smell your house because of olfactory adaptation. When an odor stays constant, your olfactory receptors and brain reduce their response, so familiar scents fade into the background. This frees your attention to notice new or changing smells that could signal danger. Step outside and come back in, and the odor returns because the stimulus is no longer constant.
