Humans can't actually smell metal. When our fingers touch iron or copper, skin oils react with the metal to create volatile odor compounds. Ferrous ions from the surface trigger skin lipids to break down into volatile molecules that evaporate quickly, and our noses register them as a metallic scent on coins, keys, or even blood. The odor comes from our skin chemistry, not from the metal itself.
