Humans can't absorb left-handed sugars the way they absorb right-handed ones. Life mostly uses right-handed (D) sugars, and our enzymes fit that shape. Mirror-image L sugars can still trigger the sweet-taste receptor, so they taste sweet, but the body can't break them down for energy. So you get sweetness without usable calories.
