Stilton Not From Stilton

Stilton Not From Stilton

You can't legally make Stilton cheese in the village of Stilton in England because the protected designation of origin limits the name to cheeses produced in Derbyshire, Leicestershire, and Nottinghamshire. Stilton is an English cheese made in two varieties, including a blue type inoculated with Penicillium roqueforti, and it takes its name from the village where it was long sold rather than made. In 1996, the European Commission granted Stilton PDO status, formalizing those county and production rules after earlier national trademark protection.
