Carnivore Diet Triggered Widespread Xanthomas

A man in his 40s adopted a carnivore diet that included 6 to 9 pounds of cheese, sticks of butter, and extra fat added to his daily hamburgers. After about eight months, painless yellow cholesterol deposits called xanthomas appeared on his palms, soles, elbows, and even his eyelids. His cholesterol exceeded 1,000 mg/dL, compared with his previous range of 210 to 300 mg/dL.
