Contemporary garlic bread originated in the United States during the first half of the 20th century, when Italian immigrants adapted the much older Italian dish bruschetta. Because olive oil remained uncommon in the United States, they replaced it with butter and spread it with garlic over crusty bread. By at least the 1950s, many American restaurants served garlic bread alongside pasta dishes.
