After World War II, mutton consumption collapsed, and the meat almost disappeared from American menus. During the war, American GIs repeatedly received canned Australian mutton that many considered awful, and returning veterans often refused to allow sheep meat in their homes. They didn’t like it. Add to that beef competition, declining wool production, and the higher cost and longer cooking time of mutton, and it was removed from mainstream American cuisine.
