A single polar bear liver contains enough vitamin A to kill as many as 52 adults. Polar bears accumulate vitamin A produced by marine algae lower in the food chain, and their bodies store it in the liver because it cannot easily flush out this fat-soluble vitamin. Just 0.1 grams from a well-fed bear can supply the human recommended daily allowance of 0.9 milligrams. When divided into daily portions of that size, one liver would last for 143 years.
