Curry reached Vietnam when French colonizers brought it over from Pondicherry in India during their overlapping colonial rule. They introduced the dish into Vietnamese cooking, where local cooks adapted it to suit regional tastes. Vietnamese versions began to feature coconut milk and lemongrass, giving the sauce a richer texture and a fragrant, citrusy aroma.
