Cells in the retina decline in sensitivity as we age, which means colors like blue start to look more washed out over the years. As the light-sensitive cells and other structures in the eye age, they do not process color as sharply as they did in youth. Blue tones in particular can lose their vividness, so the sky really did look bluer when you were younger.
