Before the 1923 Great Kanto Earthquake, sushi in Japan was mostly sold as quick street food. The quake devastated Tokyo and caused land prices to fall, which suddenly made it affordable to open sit down sushi restaurants, called sushi-ya. By the 1950s, eating sushi at restaurants had become the standard way to enjoy it.
