Fungal Poisoning from Coconut Water

In Denmark, a 69-year-old man drank coconut water through a straw from a ready-to-drink coconut that had been kept on a kitchen table for 1 month instead of refrigerated at 4–5°C. The fungus Arthrinium saccharicola had spoiled the water and produced the toxin 3-nitropropionic acid. He developed severe encephalopathy and died 26 hours after hospital admission.
