Japan's Strict Meat Grading

Japan has some of the world's strictest meat-grading rules. The "Beef Marbling Standard" (1-12) is the most important characteristic that determines the grade of each carcass. USDA Prime, the highest marbling grade in the US, equates to about 4. Most domestic Wagyu or hybrids would score 6-9, while Kobe usually ranks 10+.
