Speculoos are spiced gingerbread shortcrust cookies that are traditionally made and eaten on St. Nicholas Day and throughout the Christmas holiday season in many parts of Europe. They’re traditionally embossed with designs using wooden molds, special rolling pins, or cookie stamps.
