  1. Re #1: I first encountered UHT milk way back in 1979 in Germany. That milk was stored on the regular shelves, outside of the refrigerators. I’ve seen UHT milk for years in the United States, also on the regular shelves. And I am now living in Beijing, China. The UHT milk here is kept on the regular shelves. The only time it’s refrigerated is after the consumer opens it and it, of course, requires refrigeration at that time.
